Our production is simple yet rigorous: carefully tended olive trees, early harvesting and cold pressing to preserve the olive’s full freshness. Minimal intervention, maximum respect for the fruit.
Step by step
1. Tree care
Pruning, natural fertilization and avoidance of chemicals.






2. Early harvest
The first week of October to obtain green and aromatic oil.
3. Fast transport
From the olive tree to the mill in a few hours
4. Cold pressed
Extraction with controlled temperatures to preserve aromas
5. Rest and packaging
Natural decantation and packaging in a can/box to preserve quality.
At Oli d'en Sergi we offer a guided tasting of four 100% Arbequina extra virgin olive oils, from our farms and harvested at different times of maturation.
In a session lasting approximately one hour, you will discover how the aromas, taste and intensity of the oil vary depending on the harvest, you will understand the production process and learn to identify its main sensory characteristics.
An enjoyable, educational and very revealing experience, ideal for both enthusiasts and the curious who want to delve deeper into the world of olive oil.
